Eat Clean Blackberry Lemon Crepes

One Easter when we were living in south Georgia, I started the tradition of blackberry lemon crepes for Easter morning. It has been a hit for numerous years now no matter where our family lives. This year is a bit different as I am permanently transitioning to an Eat Clean lifestyle with no to very limited sugar. This recipe is a delicious way to make crepes, a lemon cream cheese filling, and a naturally sweetened blackberry topping.

Eat clean all natural no sugar blackberry lemon crepes.

Cream Cheese Filling
  1. Prepare yogurt cheese recipe the day before, let sit over night in refridgerator. Using 1 cup yogurt cheese, blend lemon juice and honey till smooth.
Blackberry Topping
  1. Rinse blackberries then smash until juices are created. Add honey, cinnamon, and lemon. Let sit and chill over night.
Eat Clean Crepes
  1. Mix eggs, almond milk, salt, honey, and coconut flour until there is a thin almost runny consistancy and it is smooth. Add more almond milk a tbsp at a time if it is too thick. Spray cooking pan on stovetop with avacado or coconut oil spray. Cook each crepe on medium-high heat, turn at 1/2 way point. Once all crepes are cooked, place on plates. Stuff crepes with cream cheese filling, roll, and top with blackberry topping.
