Creamy Cilantro Sauce with Eat Clean Beef Fajitas

Taco Tuesday and other festivities can now be fajitas as I transition to clean eating and a healthier lifestyle. You can substitute shrimp and chicken instead. I paired it with eat clean shrimp ceviche and passed on rice and beans for now.
For the fajitas, simply use beef slices or steak strips that you can get within reason. Our local health market has a decent price on grass fed beef. I pair in a skillet with sliced onions, fresh garlic, and sliced organic bell peppers. In the skillet I cook fairly high heat and use avocado oil.

Below is the recipe for the tangy and refreshing creamy cilantro sauce. After the fajitas are cooked and placed inside sturdy romaine or green leaf lettuce, I put a few teaspoons of this sauce for extra flavoring.

  1. In a food processor, blend all ingredients until smooth and creamy. Some particles of cilantro will remain.
