Clean eating Lime Shrimp Ceviche

When I was young we were able to go to San Carlos Mexico and experience fresh ceviche that was memorable and delicious. I use ceviche now as a way to pair healthy Mexican foods with a dish that is light, refreshing, healthy, and filling. I tend to not use as many spices, but you can add jalapeno or other peppers to your ceviche to give it a kick! Be sure not to use tomato sauces or spices sauces that may have hidden sugars if you are eating clean.

  1. Dice and prepare all ingredients, mix well in bowl and let sit for 5-10 minutes. Eat fresh or refrigerate.
